Back again with more fun!

Today, my mother in law had the unfortunate trip to the doctors to have surgery - she has kidney stones. I have never had that before so I have no idea how painful or agonizing it is...but I can certainly imagine. We actually found out about this appointment last night and decided that we wanted to do something to help her and her husband Jim out. This all leads to today's task.

This morning was the regular routine. Afterwards, I headed to the grocery to pick up the goods to make chicken n dumplins. I also picked up 5 cans of refried beans (vegetarian which is 99% fat free :) ). I know that is quite random and not the least bit tied to chicken n dumplins but they were on sale and it is a staple in our home!

Ok, so I head home to start the chicken n dumplins. A big stock pot of it so that there is some left over for Todd - he loves chicken n dumplins. I also made zucchini bread - and that is where the real fun began!

Zucchini bread is a new recipe I tried a couple of Sunday's ago. It was a hit for both Todd and I! But there are a lot of ingredients and the shredding and wringing dry of the shredded zucchini is quite a chore and a mess. I finally got my batter going in the mixer and was starting to put stuff away (I am one of those cooks that clean as I cook). Most of the things that had to be put away had to go in the cabinets above the mixer. Do you see where this is going yet?? Ok, well I was moving the glass sugar bowl and the plastic salt bowl to the side so that I could put something behind it...got it yet?? If you guessed a HUGE mess, you are right! The glass sugar bowl came barreling out at me and broke into wonderful small pieces all over the counter...right next to the mixer. Well, I certainly cannot chance the batter having glass in it so I had to start all over again...this was about 2:30.

You might be thinking...well, she has all the time in the world because she is a sloth. Not true. We had to leave the house at 3:30 to get the goodies to Steph by 4:30 so that I could get to the gym by 5:30...the bread takes about an hour to bake. Yikes. But it all worked out and the bread was done on time. We headed to Steph's, visited for a bit and then I headed to the gym as T headed on home.

Gym was a two hour night...training for an hour and class for an hour. It felt great. My trainer, who also owns horses, was in a sad mood. Her new 11 year old horse may have cancer. She was pretty upset so we tried to be our usual goofy selves to make her feel better. But Amber wasn't having a good day either so it was up to me to put a smile on my friends' faces. I don't know if it worked or not.

After my hour drive home, I made a big salad for dinner while T had left over dumplins. Afterwards, we both had some zucchini bread - man that is so good! Now we are sitting here watching the new Ghosthunters getting scared out of our minds! Awesome!!

Tomorrow I need to straighten up around here a bit. I am having lunch with Jason who is a great friend that I worked with briefly at my last place of employment. I am really excited to catch up with him. We became instant friends and we are determined to stay in touch. I am also going to my girly doctor tomorrow. It is a new doctor. Long story - I meant to make an appointment with the doctor I had gone to before but I made a mistake and scheduled one with a doctor that T always talks about. But they are going to accept me as a new patient - and this doctor is supposed to be the best...and it is a woman (which used to be a wierd thing for me). Anyway, it is just for an annual exam. I will let you know the outcome.

Well, T and I have some ghosts to hunt. And it's getting good. So I need to run for now (and, if I were to ever see a ghost, running is exactly what I would be doing). Back again for more exciting housewife adventures...
